Caveat: 누운 소 타기

This is an aphorism from my aphorism book.
누운               소  타기
nu·un             so  ta·gi
lie-down-PASTPART cow ride-GER
[As easy as] riding a lying-down cow
“As easy as pie.” I never understood this English aphorism – why is pie, specifically, easy?
I think riding a lying-down cow sounds pretty easy.
